Kale Pasta with Avocado

basil
2 or 3 cloves of garlic
kale
olive oil
salt and pepper

This is a variant of a kale pesto recipe. Cook down the kale until it’s softened, throw into processor with fresh basil and garlic. Gradually add olive oil (you may need to add a little bit of water depending on your processor/blender). Add salt and pepper to taste. I really wish I had pine nuts to blend in, but gotta make do with what’s on hand.

A friend of mine confused kale for lettuce and upon tasting it, described kale as “some shittt!!!” haha. Personally, I really like the taste of kale (and leafy greens in general om nom nom) so she threw her mistaken bag of kale my way. So far I’ve made kale pesto pasta and a simple sauteed tomato and kale dish with sesame seeds for garnish. I’m thinking about making green smoothies with it too: the possibilities are endless.

Last night I made a spicy vegetable puree soup, oregano lemon breaded tilapia, and rice with a lil’ bit of sesame oil (which is so fragrant!).

Having a kitchen is the best thing in the world. Though having friends who show up with a magnum of red wine comes in at a close second.

Michael has so many pictures of his kids, he had to get two phones, with two numbers, and he pays two bills. He’s just so happy to have a family plan.

One of the most endearing things about Michael was how much he wanted a family, whether it be at work or at home. Augh so adorable.

…I will be comfortably stationed at my lovely friend’s apartment. It’s the sort of place where maps and dangling tea lights adorn the walls; where both the kitchen and the book shelf are well stocked; and where in every corner there is some charming little knick-knack or decoration. Technically I’m here to progress research for my job, but I plan on doing so while lounging outside on a blanket lol. I also plan to take this time to plan for the next academic year, to go for long runs, and to drink many cups of tea while ruminating on my goals for the summer and beyond.
